2-MCPD, 3-MCPD and Glycidyl fatty acid Esters: determine their presence in food products

2-MCPD, 3-MCPD and their fatty acid esters are chemicals formed during the industrial process of Hydrolyzed Vegetable Proteins (HVP), especially during the high-temperature refining deodorization step. EFSA’s 2018 scientific opinion (updated 2016 opinion) reviewed them as safe for most consumers. However, they can have a “potential health concern among high consumers in younger age groups”.
